Tekwan

Bahan :

Kuahnya
100 gr udang
air, untuk merbus udang
jamur kuping kering (Kikurage) , siram air panas hingga lunak, tiriskan, iris-iris
20 gr sedap malam kering, buang bagian putih, ikat simpul (saya belum pernah nemukan di Sini )
200 grm bengkoang, kupas, iris sebesar korek api (saya ganti dengan Daikong)
2 sdm minyak goreng untuk menumis
5 siung bawang putih, haluskan

Bawang Bombay iris halus
¼ sdt merica bubuk
2 sdt garam

Adonan ikan:
350 gr fillet ikan tenggiri haluskan
1 telur, kocok
2 sdt garam
250 ml air
400 gr tepung sagu/ katakuriko (kadang lebih samapi adonan kalis aja)
air untuk merebus


Pelengkap :
Soun

daun bawang iris tipis
bawang goreng

Cara membuat:
1. Adonan ikan : lumatkan ikan, aduk bersama telur dan garam sambil tuangi air, aduk. Taburi tepung, uleni hingga adonan kalis dan tidak lengket ditangan.
2. Didihkan air dalam panci. Cubit-cubit adonan ikan sebesar kelereng (sesuai selera), masukkan ke dalam air mendidih. Masak hingga terapung, angkat dan tiriskan

3. Untuk kuah panaskan minyak goreng dalam wajan, tumis bawang putih dan bawang Bombay hingga harum lalu masukkan udang cincang

4. Didihkan air bersama irisan bengkoang dan jamur kuping, campur dengan tumisan bumbu, bubuhkan garam dan merica terakhir campur adonan ikan masak hingga mendidih.

5. Sajikan hangat gengan taburan bawang goreng, irisan daun bawan dan daun seledri, kalau suka pedas bisa di tambah cabe, cuka dan kecap.
